When alcohol changes into vinegar, the chemical reaction results in asubstance called cellulose. Hereisaneasytofollowstep-by-stepprocessformakingapplecidervinegar:
1. Findawide-mouthedcontainer thatwillholda sufficientvolumeofliquid for you. (Thewidemouth is so that there is sufficient surfaceareatofacilitateoxygenabsorption.)
2.Sterilizethecontainerandthenfillittotwo-thirdsfullwithhardapplecider.
3.Younowneedtoaddalittleunpasteurizedandunfilteredapplecidervinegar—thiswillstillhavelivebacteriainit.Alternativelyyouneedtoadd some “mother of vinegar,” which you will be able to buy frommosthealthshopsorbrewingstores.
4. Put the container in a dry, clean, dark, out-of-the-way area that isstable in temperature and cover the top with a cheesecloth. Thecheesecloth will allow oxygen in while keeping insects and othercontaminantsout.

Youcanalsomakeapplecidervinegarfromwholeapples,itjusttakesalittlelonger.
1. You need two glass bowls, one larger than the other, and asmanyapplesaswillfillthelargerbowl.
2.Washandquartertheapples,thenplacetheminthelargerbowl.Leavethem tobrownand then fill thebowlwithwateruntil the apples arecovered.Cover thebowlwith the apples in itwith a cheesecloth andleaveitinawarm,dark,andcleanplaceforsixmonths.
3.Whenthesixmonthsisover,youwillnoticeagrayishscummyfilmontopofthewater.Thismeansthattheprocesshasbeensuccessful.
4. Now strain the liquid from the bowl through a coffee filter into thesecondbowl.Coverthebowlagainwithcheeseclothandleaveitinthesameplaceasbeforeforanotherfourtosixweeks.
5.Whentheapplecidervinegarisreadyyoucanstrainitthroughapapercoffee filter again to remove the “mother of vinegar,” or you cancarefullyremoveitusingafinemeshspoonoralargeservingspoon.
Commercially,theproducersofvinegarshavetriedtohastentheaboveprocessesandincreasethevolumeofbatchesbyusingmanyinventivemeans.Withwhat
hasbecomeknownas theOrleansmethodor the fieldprocess,manufacturers,originally in France and nowmost commercial cider vinegar producers in theworld, use fifty-gallon wooden barrels filled to half capacity and laid on theirsidestomaximizethesurfaceareaexposedtoair.Holes,coveredinmeshtokeepcontaminants out, are usually drilled in each end to aid airflow. Themanufacturersalsoneedtospeedupthefermentationprocess,sotheydothisbyaddinganoxygenatingsubstancesuchaswoodchipsorcorncobstothebarrel.
